Oreo Muffin




Tired this recipe today using recipe from Hut of Cranberry .

You can create many different type by using this basic recipe.

Yes, indeeed it's soft & fluffy inside and it's not too sweet with these tiny Oreo.

It's quick & easy steps with the below few ingredients :-

Yields : 13 muffins

Ingredients:

(A) 290g plain flour, 1 tbsp baking powder
(B) 230g caster sugar (I used 210g as i don't like it too sweet)
(C) 3 eggs, 120ml fresh milk, 200g of melted butter ( i used canola oil) & 1tsp vanilla essence
(D) Handful of tiny oreo biscuits

Method:
1. Preheat oven to 190deg.
2. Sieve ingred (A) into a big mixing bowl. Add in ingred (B), mix well.
3. Add in ingred (C) slowly, beat with a ballon whisk to combine ingred. Don't over mix.
4. Spoon no. (3) into paper-lined tart moulds till three-quarters full. Arrange on a baking tray.
Fill up full if you want a high dome.
5. Insert 2 Oreo into each muffin and then put in mid rack of the preheated oven to bake
for 20-25 mins . Cool on wire racks.

Japanese Rice roll (饭团)




I assume that my nieces are tired of eating porridge everyday so i made some Japanese rice rolls this morning for their lunch.
These 2 little mosters were overjoyed and keep rushing me to finish off to make this colour roll.
I used eggs , tuna & ham for the fillings and roll up with dried seaweed sheet. The roll was not wrapped tight enough and the fillings tends to drop out when bited. For yr information, this is the 1st time, i cooked Japanese rice, Perhap need to reduce alittle water to get firmer rice .
So here it goes, Quick & easy :- Japanese Green tea to go along with these rolls.
This also can be a quick snack for kids during school excursion or family picnic where this can be packed ahead.

Lavender (薰衣草) Cookies






Yes, lavender cookies..i dare not try recipes that using lavender as many feedbacks that it taste like soap and a bit of bitterness aftertaste.

As it's said in this article whatscookingamererica, a little goes a long way, so decide to try this recipe by Fresh from the Oven.
The dough was a bit too wet after 30 mins of refrigeration so i addeded 1 tablespoon of flour and
put in the freezer for another 15 mins. Perhap i have added too much butter due to the guessimation of tablespoon.
I 've also cut down the amount of lavender to half and the result is too mild of smell and abit too sweet for me.
However, it's defintely a keeper for festival baking's gift

Glutinous Rice



Hi, i'm back.......

Well, back to my kitchen again after long 'Holiday'..

Too many recipes to try on and i chose to start with today's topic.

As a cantaonese, our family love this traditional Tim Sum snack made from G. rice. I like anything which made out of it like Bak Chang, Law mai Kai, Lotus leaf rice, thai mango rice pudding etc.
I followed to this recipe http://jodelibakery.netfirms.com/ but made a little modification.
I mixed all the stir fry ingredients with the uncooked rice and then steam it at 1 time and also replaced the chicken granules with 1/2 tsp of salt.
The rice is really smells good with all the chinese sausage and mushroom when it's cooked piping hot from the wok. You can add any topping as you wants depend on your preferrance. With topping of deep fried shallots, braised peanuts & spring onions, i can't wait to finish it off.

Chocolate Fresh cream Cake



Made this simple cake today for my brother's birthday
Feuillitine filling layer with Chocolate sponge cake.
As you can see , I still need more practise on the creaming :P.

Durian cream puff



Made these Mini cream puff last weekend.
Use custard filling with some durian meat added.

I had tried few recipes before but couldn't get the best result
as the consistency of the batter is important for the puff to rise.

This time, i try to judge myself instead of following extactly to the recipe.

And the result is satifactory.
Golden Brown firm crust with soft texture inside.
Cool on rack before piping in the filling.

Yummy...best after chilled.

Fruit Tarts




Wanted to bake something new beside Cakes N Breads,
so decided to make some fruit tarts.
Spotted some fresh strawberry on sales while do marketing at NTUC this morning
so decorated them with some Kiwi n canned Peach.
See ..Nice colour combination with creamy custard.
Best serve after chilled.

Steam Taro Cake (Wu Tow Ko)

Finished Product: Steam Taro Cake





Managed to get fresh Taro (Yam) from Wet market today and decide to make this as it's one of my favourites food.
Taro cake (wu tow ko) is a very popular Chinese breakfast or snack dish where you can found in the morning markets food centre and dim sum resturants.

Main ingredients are Taro, rice flour and dried prawns, preserved meat(Lap Cheong), mushroom and garnish with shallots, red chili and parley.

They're normally serve in pan fried or steam version and goes well with sweet soy or chili sauce.

'Sushi' Egg Roll



No, It's not sushi......

It's simple and yet looks appettizing to both adult & kids.
I bought this fish paste from Supermart and modified alittle for the kids
so omitted mirin and also substited chili with grated carrot in order to get the
colours.
Next time , i will try to improve on the egg thickness so that thinner ones can be rolled easily.

Recent CNY bakes








Busy..Busy...Tired..Tired..
Although i'm not baking alots of stuff but making lapis is reslly time consuming.
As i have mentioned in last post, my 1st attempt on this kek Lapis quite sucessful.
Futhermore, got addicted and 'big head' as recieved good feedback from my neighours anuties.
So this year, no baking for cookies and concentrate only on lapis and pineapple rolls.

Kek Lapis( Layer Cake)


Always wanted to make this cake..But hesitate because of the high content of eggs..
Thinking of that , we only eat it once a year as Chinese New Year Goodies
and it's expensive for just a small piece of cake.
Finally, decided to make it today followed to TG 's recipe.
I made 1/2 recipe with 10 egg yolks & 5 egg white uisng 9 x 6 x 3 inch tin.
This cake really need full attention as the thin layer can get burnt easily in a minute
during bake.
The result is fairly good as it's my 1st attempt.
Will try to make few more as CNY 'gift next week.

Mango Yogurt Cheesecake

Mango is one of my favourite fruit and it's goes well with the combination with Cheese.

I made a mistake in pan size.

Err...can you see the different from tazz's?

I did not put the top layer of mango pudding for finishing

as my cake is already reached to the rim of the pan otherwise it'll overflow.

So slice some star shape mango on top layer to finish up the whole cake.

Sweet Bun and Sausage Rolls





Previous Bakes on Sweet Bread and Sausage rolls.
Used Alex Goh 's recipe book bought from Popular.
Bread is almost a must in our daily breakfast and sometime even bring them to office as lunch.
Athough home made bread is less 'chemicals' compare to commerical ones in bakery shop,
but they tends to become hard after 2nd day unless bread softer or improver is added.
Anyway, i always make them in small batch and they are easily finished off on the 2nd day.
So no worries..Ha..Ha..


Carrot cake aka Chai Tau Kueh





Made carrot cake aka Chai Tau Kueh today using Florence's recipe..
Since CNY is coming and yearn to try it out since we like to eat very much.
It's Hong Kong style unlike those that we have at Kopitim.
I've added additional ingredient : grated carrots inorder to lighten up the colours.
Texture is soft and it can be eaten in plain after steaming or
fried them with eggs & lots of garlic.
Vedict:
Hmm..tasted a bit sweet & has little bitterness..not sure why..

Japanese CheeseCake



Pick this recipe from a book called 'Desserts'. Japanese C.C. is different from London 's which is rich & dense. This is fluffy & light. i baked it using waterbath in oven at 180 degree. I've baked it for few times and satify with the result . so will bake 1 for my Cousin for next visit.

Ingredients:
80 g cream cheese
60 ml milk
2 egg yolks
2 egg whites
90 g sugar
3 tbsp plain flour
1 1 /2 tbsps corn flour
1/3 tsp cream of tartar
Method:
1. Preheat oven to 180 degree
2. Sift flour & cornflour. Set aside.
3. Cook milk & cheese over low heat until cheese is melted. Set aside.
4. Beat egg yolks & half portion of sugar untill light & creamy.
5. Fold in cheese mixture.
6. Fold in the shifted flour & cornflour.
7. Beat egg white till stiff. Sift in cream of tartar and add the remaining sugar
half at a time. Beat until stiff peak form.
8 Mix egg white into the batter and cream till well combined.
9. Line a 15 cm cake tin with baking paper. Pour in batter.
10.Place tin in a baking tray. Pour in water until half full. Bake for 20 mins.
Reduce to 150 degree and bake for 15 mins. Stand 10 mins before taking out to cool.

Note:
I baked 2 x recipe ingredients in 23 cm round tin for 1 hr.
In addition, i only baked in 180 degree without reducing it.
Cover Top with aluminium foil if brown too fast.

Orange Chiffon Cake





As Pandan Chiffon cake is very commonly sold here so I abit surprise to see this Orange Chiffon cake recipe in Florence's Blg. Ok..i know B.S. sold it but i never tried before.
After few past failure in baking the Pandan C.C, i give this recipe a try.
Surprisely, i made it..
well, can call it a sucessful one..
I's not so sweet and has a tangy flavour..
Hmm.. refreshing and light cake without coconut milk...
Will definite bake more in future..

Found block of cream cheese which expire soon ..so decided to try this chocolate Cream cheese cake from Zu's blog.



A nice desert after dinner as chocolate & creamy taste good after chilled before serve.

Recent bakes on Pau,
I have always like to eat Pau especially when young.
My dad always buy dim sum when he got his wages and i like Pau the most..and my grandma also can made good Pau where she learnt it from her Old friend who run a Pau Shop in old days. Too bad, i did not get her recipe and she's gone now. I will always remember the taste ..Po Po.



Now, I wanted to do some home made ones and tried Zu's recipe.

Instead of Vegi, i used Char siew as it's easier to prepare.

It's fluffy & soft as what she said. It's similiar to those sell at Coffee shop.
I & my mum ate 2 at 1 Go when they're piping hot from the streamer.
It's the short cut recipe to those needs 3 or 7 days dough proofing.
This is defintely a keeper.




Strawberry Marble cake

For today's Pick, The Marble Butter Cake from TG. I don't really favour this type of cake which high in butter & sugar content. But it's taste good over cup of a afternoon tea.

I used strawberry paste for the swirl instead of chocolate and its' easy to make.
The texture is not as compact as traditional one and should reduce sugar for the next try
